I finally did it:

Outlook funktioniert wieder, und es nimmt Outlooke Express die Standard-Mailer-Eigenschaft nicht mehr weg.

Und fall ihr auch mal mit einer neueren Outlook/OE Version die Kontakte mit dem Adressbuch synchronisieren wollt:

Officially, Outlook 2002 and Outlook 2000 in Corporate/Workgroup mode do not support sharing of its contact data with Outlook Express, but there is a registry hack that works, at least with some versions of Outlook Express. Follow these steps:

Make a backup of your Windows registry.
Open the Registry Editor (regedit.exe or regedt32.exe).
Go to this registry key:

HKEY_CURRENT_USER\Software\Microsoft\WAB\WAB4

Add a new DWORD named UseOutlook (if it isn't already present), and set its value to 1.

Interessanterweise ist es bei mir mit Outlook 2000 und IE 6.0 und auch mit dem IE SP1 noch gegangen (da kommt ein entsprechender Menü-Eintrag im Adressbuch von Outlook Express). Aber nachdem ich alle Outlook-Sachen aus der Registry gelöscht habe, hat auch eine Neuinstallation diesen Menü-Eintrag nicht mehr erzeugt.
